Can you believe a new school year is already here?! I know most people dread the end of summer, but I absolutely love this time of year. As being a first time mom with a little dude in school, there are many new things to be excited about. I love the changing seasons, new school clothes, school supplies, being that much closer to all the fun holidays and packing lunches…yes, you read that right!
I’m that girl who’s come to enjoy coming up with healthy lunches that my little picky eater would love and trust me when I say that I’ve become an expert in finding delicious and sneaky ways for Jude to get all the nutrients he needs in a meal. When packing lunches, the meal isn’t the only priority. We can’t forget about the lunch box. Having a great lunch box is a crucial and vital element in this lunch packing game! With Jude having Autism and struggles with fine motor skills, he needed a lunch box that he could open and close on his own, without having to put everything in Ziploc bags.
PlanetBox and Jude became homies!
When the Rover PlanetBox (comes with 1 Big Dipper and 1 Little Dipper) arrived at our house along with the train magnets and carry bag, Jude was already completely won over because of the trains and he wouldn’t stop opening and closing it 😉 That won some major points in my book, but here are a few other key reasons why we love it.
Cost Effective & Eco-Friendly: You may gasp a little (okay maybe a lot) at the price tag (Rover is $55.99 USD) but hear me out! We all know that it’s much cheaper to buy food in bulk to make your own lunch, than eating out and spending $10-20 per meal. That is no bueno! This isn’t your flimsy tin lunchbox either. It’s high-quality stainless steel that has a 5-year warranty. [ insert raise the roof emoji here]
Fun, Easy & Healthy: Whether you’re buying this for yourself or your little one, you can’t help but smile at all the cute magnet designs that you can customize it with. I’m forced to think of ways to creatively fill those holes in the box without overfeeding Jude because of its design to hold sensible portions. Once it’s time to clean it, you can just throw it in the dishwasher and call it a day!
Now here are a few things to consider or that you should know. This box is a little on the heavy side, although it isn’t a problem for Jude since he doesn’t carry his box around all that much. Secondly and lastly, due to leaks, tall food or food not shaped like the spaces provided, not everything will fit in the box. It’s great for salads, cut fruit, cut veggies, sliced sandwiches, wraps and meals like chili with quinoa that are spooned into a container. Anything that may leak, don’t do it-not unless it’s going into a container.
Now let’s get to the lunches!
Being that we are busy mamas, both of these vegetarian lunch wraps take only a few minutes to put together and they’re loaded with hemp seeds for some much-needed protein. Fruits and vegetables are my go-to sides, as well as cheese, pumpkin seeds and some healthier dry snacks like goldfish crackers, veggie chips and coconut chips.
- 5 leaves romaine lettuce, chopped
- 1/2 cup croutons
- 1/2 cup shaved parmesan
- 1/4 cup caesar dressing
- 3 tbsp hemp seeds
- 1 whole wheat tortilla
- In a bowl, mix chopped romaine lettuce, crouton, parmesan, hemp seeds and caesar dressing. Stir until combined.
- Place your mixture into the wrap. Roll tightly and slice!
- 1 cup hemp seeds
- ¼ cup almond milk (or other non-dairy milk)
- 1 tablespoon + 1 teaspoon cacao powder
- 1.5 tablespoon maple syrup
- 1 banana
- 1 whole wheat tortilla
- In a food processor or blender, blend hemp seeds, almond milk, cacao powder and maple syrup until smooth.
- Spread the chocolate hemp seed butter all over your whole wheat wrap and place banana inside the wrap towards the edge. Roll tightly and slice.
