TRAINS, TACOS, GUACAMOLE, CAKE, AND A SIX-YEAR-OLD— TACO ‘BOUT A PARTY!
Holy guacamole you guys…I can’t believe I have a six-year-old. Now, I could get all emotional and talk about how time is just flying by and I don’t want my little dude to grow up, but I won’t simply because I’ve done it all too much already. 😂 So, we’re just going to dive right into all the fun details of Jude’s Taco Train Birthday Party!
This is officially my FOURTH train party theme for my little dude! I know, crazy right!?! His 2nd birthday party was Thomas themed, 3rd was Vintage Mickey Mouse Train, and 4th was a Circus Train party. This funny dude of mine is one dedicated train enthusiast and man I love him for it. When we sat down and talked about birthday party ideas, I gave him a few options. STAR WARS, Lego anything, or another train party. He immediately said a Taco Train Birthday Party. Making sure I heard him correctly, I asked him a few times over to repeat his party request, and yup, I heard right.
I’ll admit that this theme of his was probably the most exciting one for me to plan. Mexican food/Tacos are basically life! I know guac is extra and I’m more than okay with that, cactuses make my heart skip a beat, and colors so fun and bright give me legit emoji heart eyes. 😍😍😍 Did I mention that this was Jude’s party and not mine!?!
Unlike his other party themes, I attempted to make it a little more simple in the “train” department because I’ve always gone all out when all he’s ever really cared about was having at least one on a table and another on the cake. Which is exactly what I did! So I spray painted one of his ( out of 15) Christmas trains and added the most ADORABLE mini pinata tacos. Along with the cute centerpiece at the table, the menu consisted of a variety of Tacos (of course,) chili lime chicken, fish, and chipotle beef tacos, guacamole and sweet potato tortilla chips that ran out before the tacos were even served, corn salad, fresh homemade tomato, and PINEAPPLE salsa (please tell me you want the recipe because it’s my fave EVER.)
And that time when I said I was going to make a cake for his birthday, and then decided to bail on that idea real quick…Yeah, that totally happened. So I bought him a pina colada cake from Costco and I have zero shame or regrets about this decision. 😎 Okay, but the one thing I do have shame about is not owning a single cake tower…Girl, the embarrassment is REAL. Is that even what they are called? See, all the shame.
This was by far the best birthday party my little dude has had! I know I talked about my excitement and love for this fun colorful theme, but Jude was even more excited! Usually, his parties are a little tough. He struggles with all the loud noises of people talking and kids screaming, or he’s overly hyper and you can’t get him to focus or calm down, but this year seemed a little different. He was all around the happiest little dude. No meltdowns, he “helped” with the decorations, and smiled the entire time while everyone was singing (very quietly) happy birthday. I’d say this was the most successful one yet! Now let’s see if I can top this train themed party next year. 😅
