Pumpkin spice and everything nice— This crunchy pumpkin spice granola is the perfect healthy alternative to enjoying the seasonal flavor.
Every single year when September first rolls around the corner and shows its beautiful self, you’ll find me in my closet putting away all of my sandals and summer clothing and bringing out my boots, sweaters, and all things cozy! Well, the same is said for my pantry/groceries. Pumpkin spice everything, squash, hearty soups, chili, stews, etc… I just can’t help it— I’m a Fall lover through and through. So you totally know that I’ve already been to Starbucks (twice) and ordered my PSL with almond milk and no whip cream. Granted, I may have it only once more this season because it’s a sugary treat, but I needed to replace it with something healthier with all those same pumpkin spice flavors. Alas, the pumpkin spice granola was born!

I must admit, my excitement for Fall is quite annoying and depressing for the majority of my circle of friends. I act like Fall is a holiday that must be loved by all and I have zero shame about it. While they are reminiscing about days spent having fun in the sun, I’m over here dreaming about Fall getaways and tree-lined streets of yellow, orange, and red. Before I get carried away, as I’m typing this out, I’m realizing that in the almost three years this blog has run, I’ve shared my undying love of Fall every single year, so I won’t continue to do so. I think I’ve proved it enough.😆
This pumpkin spice granola is basically the answer to all the unhealthy pumpkin cravings I’ve had. It’s sweetened with maple syrup and loaded with coconut chips, pumpkin seeds, and pecans. Now the recipe calls for rolled oats, but don’t break your head over which kind. I buy the Quaker quick oats from Costco and it works the same as the non-quick cooking ones. Also, totally optional but so good, adding dark chocolate chips and/or dried cherries or cranberries. I know for a fact that all you pumpkin spice lovers will make multiple batches of this granola and put it on everything!
For an added burst of pumpkin spice flavor and the yummiest breakfast idea, make a pumpkin spice yogurt bowl! All you’ll need is 1 cup of plain Greek yogurt, 1 Tbsp pumpkin purée, 1/2 Tsp pumpkin pie spice, and 1-2 Tsp maple syrup. Just mix all the ingredient together, top with the yummy granola, add some fresh fruit if you’d like and voilà! You’ve got yourself Fall in a breakfast bowl.😉
- 1/2 cup pumpkin puree
- 1/4 maple syrup
- 1/4 coconut oil, melted
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 tsp salt
- 2 1/2 cup rolled oats
- 1/2 cup pecan
- 1 cup pumpkin seeds
- 1/2 cup coconut slices
- Preheat oven to 350 degrees F.
- In a bowl, mix pumpkin puree, maple syrup, coconut oil, pumpkin pie spice, vanilla extract and salt together. Mix well!
- Stir in rolled oats, pecans, pumpkin seeds, and coconut slices. Mix well!
- On a parchment lined baking sheet, spread mixture evenly and bake for 25-30 minutes.
- Let completely cool before storing.
You may substitute coconut oil for vegetable oil.
For a sweeter granola, you may add 1/2 cup maple syrup instead of 1/4 cup. You may need to cook it 5 minutes more due to the granola being a little more wet.
Store in a airtight container or glass jar. Keeps up to 2 weeks.
Optional: You may add dried cherries or cranberries, and chocolate chips. Or you can swap out any of the ingredients to ones that you prefer. This recipe is extremely versatile and can easily be adjusted to your taste.
